Choi Kai Yau College Wine Appreciation & Tasting Lecture

Sponsored by Banny Wine Cellar, organized by Choi Kai Yau College, Mr. Bandy Choi is invited to hold the CKYC Wine Appreciation and Tasting Lecture on Sept 20, 2018. With the award by the Association St. Emillion of France in 2011, Mr. Bandy Choi is a successful entrepreneur and lecturer of the wine industry.

During the lecture, Mr. Bandy Choi introduces the basic classification of wine which includes red wine, white wine and rose wine, as well as the different making process, origins and level. As everybody knows, wine is made of grape and different grapes. White grapes including Chardonnay, Riesling, Sauvigon Blance and Semillion have its unique aroma respectively because of the different growing environments while the black grapes, Cabernet Sauvignon, Merlot, Pion Noir and Syrah are also introduced.

Mr. Bandy Choi also teaches our students the basic techniques of how we taste wine. To learn the different wine styles, wine glasses and manner might be the first step. When it comes to tasting, we use our EYES to see the appearance of wine that is the color of wine and which always delivers the message of density, viscosity, flocculation; NOSE to smell is the step to obtain the message of wine’s condition, the aromas and flavor. Mr. Choi mentioned that following the smelling steps, we could gradually figure out the aromas from primary to secondary level, then the tertiary level; TASTE to know the sweetness, the alcohol, the body, the tannin, the finish, the balance and the acidity in wine.

There are New World Wine and Old World Wine, emphasized by Mr. Choi. The New World Wines are in particular from the United States, Australia, South Africa, New Zealand and Argentina. New World Wines tend to be more alcoholic and full-bodied in light of the hotter climates which correspondingly affect the grapes. Wines from the traditional origins says France, Italy, Spain, Portugal, and Germany are concluded as Old World Wine.

After the lecture, Mr. Choi and his assistant Ms. Candy Lei lead the wine tasting session to our students through observation, interpretation and a guided tasting. All attendees enjoy the evening a lot.

蔡繼有書院酒品賞析講座

由澳門賓利世界贊助、蔡繼有書院主辦的蔡繼有書院酒品賞析講座於二零一八年九月二十日完滿舉辦。講座由成功企業家及講師崔啟榮先生主講,崔先生於二零一一年榮獲法國聖埃米利葡萄酒協會頒法榮譽證書。

崔啟榮先生首先介紹了紅葡萄酒、白葡萄酒和玫瑰酒的種類及其不同的製作過程、原產地和等級。眾所周知,葡萄酒由葡萄釀製而成。不同的白葡萄酒則由不同品種的白葡萄製成,常見的包括夏多內、雷司令、白蘇維翁和賽美蓉,因不同產地的氣候環境栽種出它們與別不同的味道;而常見的紅葡萄則包括赤霞珠、梅洛葡萄、黑比諾和西拉葡萄。

接著,崔先生教導了學生從最基本的看、聞、嚐出發賞析酒品。品酒是一種禮儀、也是一種修行。我們可以用眼睛觀察酒品的色澤,從觀察的過程,可以發現藏在酒品背後的訊息,包括酒的質感、濃稠度和絮凝度;我們亦可以用鼻子聞到酒品的香氣和味度,崔先生指出只要按部就班,便不難分辨出酒品的原材料、造酒過程及時間;當然,我們還可以用味蕾來鑒定酒品的甜度、酸度、酒體、單寧、餘韻、平衡感以及酒的陳年潛力。

原來,根據全球釀製葡萄酒產區來區分的話,可把酒品分為新世界葡萄酒和舊世界葡萄酒。新世界葡萄酒指的是由美國、澳洲、南非、新西蘭和阿根廷釀製的酒品,由於這些國家地區的氣候較温和,此類別的酒味及餘韻較濃。而傳統葡萄酒產區,例如法國、意大利、西班牙、葡萄牙和德國則被列為舊世界葡萄酒產區。

演講完畢後,崔先生與他的助理李嘉愷小姐為同學們通過演示教學如何品酒,出席的師生共渡了愉快的一個黃昏。
